Tamaki Yoshihara Architects

The client is a sushi restaurant chain headquartered in Mihama Ward, Chiba City, operating across Chiba, Tokyo, Saitama, and Kanagawa. This project began as a full renovation request due to the aging of an existing store. The primary goal was to create a refined and tranquil environment that moves beyond the conventional image of a typical chain restaurant.

Embracing Choushimaru’s philosophy that “the restaurant is a stage, and the staff are members of the Choushimaru theater troupe,” the design places special emphasis on the counter as the focal point of the dining experience. Together with the client, we visited a fine timber yard to carefully select a single solid cedar slab that satisfied our requirements for length, quality, and cost. While tea is typically self-served from a dispensing machine in other locations, this store adopts a more personal service style, with staff presenting tea directly to guests.

In addition, the design incorporates artwork that can be seen as a precursor to the Junior Art Project exhibited at other locations, transforming the waiting area into a space open to the local community. Furthermore, mechanical and functional elements that could visually clutter the interior—such as lighting fixtures and air-conditioning equipment—are carefully concealed behind custom-built louvers, creating a calm and sophisticated atmosphere without compromising functionality.

クライアントは千葉市美浜区に本社を構え、千葉・東京・埼玉・神奈川で展開する寿司チェーン店である。既存店舗の老朽化に伴う全面改装の依頼を受け、本プロジェクトが始まった。求められたのは、従来のチェーン店のイメージにとらわれない上質で落ち着いた空間づくりである。 「店舗は劇場であり、働くスタッフは銚子丸一座の劇団員である」という銚子丸の理念にふさわしい舞台として、カウンターの設えを重視。

クライアントと共に銘木屋へ足を運び、長さ・質・価格のすべてに納得できる杉の一枚板を選定した。通常は給茶装置から自分で手に取るお茶も、本店舗ではスタッフが直接手渡しで提供される形式を採用している。 また、他店舗で展開されているジュニアアートプロジェクトの先駆けともいえる作品展示を活かし、待合いスペースを地域に開かれた空間として計画。さらに、照明器具や空調など店内を騒がしく見せる設備類は造作ルーバーで丁寧に隠し、上品さを損なわない落ち着いた雰囲気を実現している。
